Sweet potato and Lentil Soup

Ingredients

  • 1 Sweet potato peeled and cut

  • 2 All-Beef Sausages

  • 2 Garlic cloves diced

  • 2 Tbsp of chopped green onion

  • 1 Tsp Ginger powder

  • 3 Tbsp coconut oil

  • 2 Tbsp of pumpkin seeds

  • 1 Tomato

  • 2 Scoops of powdered bone broth (optional.-for added nutrients)

  • 2 Handfuls of spinach

  • 3/4 Cup of lentils

  • Sea salt or pink salt to taste

  • 4 Litres of pure water

Preparation

  • In a large pot add coconut oil, sweet potato, sausage, garlic, ginger powder and green onion. Let it fry and mix all together.

  • In a blender add the water, pumpkin seeds, tomato and bone broth, and blend well.

  • After the sausage and sweet potato have been frying for 5-10 minutes add the tomato and seed mixture to the pot and let it boil.

  • Add the lentils and let it cook for 35 minutes.

  • Finally add the spinach and salt, cover and turn off the heat.

  • Wait for 5 minutes until spinach has softened and serve.
