Keto Pancakes

These pancakes are a delicious breakfast treat you can feel good about eating.

Ingredients

  • 1/2 cup almond flour

  • 1 teaspoon baking powder

  • 1/2 teaspoon cinnamon

  • 1/2 cup cream cheese

  • 4 eggs


  • 1 tablespoon butter or avocado oil, for frying

Preparation

  • Put all ingredients in a blender, and blend until smooth.

  • Add butter or oil to a frying pan over medium heat.

  • Pour in 2–3 tablespoons of batter per pancake and turn over once the centre begins to bubble (usually takes about 3–4 minutes).

  • Top with butter and cinnamon. Alternatively, use a 1/2 cup of blueberries.
