Coconut Curry Chicken

Ingredients

  • 1/2 tablespoon coconut oil

  • 2 chicken breasts, cubed

  • 1 can full-fat coconut milk

  • 1 white onion, chopped

  • 2 tablespoons curry powder

  • 4 cloves garlic, minced

  • 1 teaspoon ginger, minced

  • 1 teaspoon cinnamon

  • 1/2 teaspoon sea salt

  • 4 cups chopped broccoli

  • 1 Cup of cooked brown rice

Preparation

  • In a large skillet, add coconut oil and sauté the onions for a few minutes, until translucent.

  • Add the spices and sauté for two more minutes.

  • Add the coconut milk and chicken. Stir well. Cover and cook on medium for 20 minutes. Stir occasionally.

  • Steam broccoli on the side

  • Remove from heat and serve with steamed broccoli or over brown rice.
