Ingredients
1/2 tablespoon coconut oil
2 chicken breasts, cubed
1 can full-fat coconut milk
1 white onion, chopped
2 tablespoons curry powder
4 cloves garlic, minced
1 teaspoon ginger, minced
1 teaspoon cinnamon
1/2 teaspoon sea salt
4 cups chopped broccoli
1 Cup of cooked brown rice
Preparation
In a large skillet, add coconut oil and sauté the onions for a few minutes, until translucent.
Add the spices and sauté for two more minutes.
Add the coconut milk and chicken. Stir well. Cover and cook on medium for 20 minutes. Stir occasionally.
Steam broccoli on the side
Remove from heat and serve with steamed broccoli or over brown rice.
